Single Serving Peach Gazpacho

Let’s hold onto summer with one last big hurrah as we begin September – snag those peaches up before we’re regretting not eating another 10!

Peach Gazpacho for one, made in the blender in 5 minutes - fresh, healthy, and delicious!Late in the spring, I signed up for a fruit CSA (Community Supported Agriculture) to help encourage me to eat more fruit as snacks and enjoy summer produce beyond veggies. We stop by a restaurant in my neighborhood weekly to snag a beautiful bag of fruit delivered from Ela Family Farms in Hotchkiss, CO, and so far this summer, we’ve had week after week of juicy, sweet peaches. This Single Serving Peach Gazpacho was the first recipe I’ve been able to make with them, since we’ve been devouring them plain!

Easy Peach Gazpacho

Ingredients
  • 1 hot house tomato
  • ½ peach
  • ½ red pepper
  • ¼ cucumber
  • ¼ cup cold water
  • ½ teaspoon red wine vinegar
  • ½ teaspoon olive oil
  • Pinch of salt and pepper
  • Optional hot sauce
Instructions
  1. Peel ½ a peach and combine all ingredients in a blender or food processor. Blend until smooth.
  2. Garnish with additional chopped vegetables and hot sauce if desired.

As the glorious peach season begins to slow down and apple varieties begin to pick up, I urge you all to snag some more stone fruit for snacking, peach & blueberry crisp making, summer sangria drinking, and this perfect peach gazpacho. Conveniently, you only need a 1/2 for this recipe, so you can nibble on the other half while throwing stuff in the blender. Or easy double the recipe and use the whole thing!
