Watermelon Margaritas

I just had a fun night at the Mercury Cafe in Denver listening to Noah’s coworkers’ bluegrassy-rock band, drinking Malbec, and eating a great tofu burrito smothered in green chile. It’s cool when you get to sit down and listen to good music while eating dinner, no? I also like it when Tuesdays force me to stay up a little later than normal. The restaurant/bar/all around wonderful venue strings up all these 70’s era strands of little lights in red and gold, and serves the best desserts ever- not only are they tasty, but they’re made with whole grains, unprocessed sugars, and a whole lot of love. There is also a wizard who will read your tarot cards for $10. I promised that I will take him up on the offer on another Tuesday night, since he looked pretty busy texting someone this evening.

Watermelon Margaritas with Agave

Speaking of wizards, I wizarded this cocktail up a few months ago but had to keep it on the D-L (read: down low) so I had something festive to share with you guys for CINCO DE DRINKO.. Oh wait, Mayo? No mayonnaise in my drink please. But anyways. I don’t have plans for next Monday night so does someone want to come over and we can whip up these frosty and summery watermelon margaritas? I love using agave as the sweetener because it is already a thin syrup, but you can sub it out for a simple syrup if you prefer (water + sugar boiled together until syrupy). Just prepare for this drink by freezing some watermelon, and you can thank me when you wake up Tuesday morning feeling fully hydrated thanks to the 90% water weight of the sweet melon.

Frozen Watermelon Margaritas (makes 2 -not strong- cocktails)

  • 3 cups frozen watermelon, blended
  • 1 lime, juiced
  • 2 tablespoons agave
  • 1 oz tequila
  • 1/2 oz triple sec
  • salt for rim

Cube up a half of a small watermelon in order to get 3-4 cups of watermelon. Freeze watermelon, cubed, overnight- I did it in a bowl and then had to wait for it to defrost a bit so if you want really slushy margaritas, freeze the cubes on a flat surface so you can blend them up right away.

Frozen Watermelon for Margaritas

In a food processor or blender, blend 3 cups of frozen watermelon cubes, the lime juice, and agave (add more if you prefer a sweeter drink). Process until you have a slushy mixture, and then add the tequila and triple sec and blend for 5-10 seconds maximum. To thin the drink out further, add a bit of water – or tequila (I did warn you that these aren’t potent so don’t worry I won’t kill you).

Easy Watermelon Margaritas for Cinco de Mayo

If you want to salt the rim of your glass, simply rub a slice of lime on the outside and then dip the glass into a small plate covered with salt. Pour the drink into your glass and top with extra frozen watermelon cubes for ice cubes.

    I had my tarot cards read last spring and the woman told me I would take on a big project in the fall and I was like say whaaaaat but that is when I started taking my blog more seriously! I don’t know if I believe in that stuff but kinda crazy ish right? PS these drinks look bomb. Yes, bomb.
